Dinosaur sandwiches

Super simple, do I really want to get out of bed this morning, bento lunch.  Dinosaur sandwich cutter purchased at the dollar store was used to create two cute litte dinosaurs.  Kids requested raw veggies with ranch to dip them in and of course fresh fruit.  On stormy sleepy days I am glad they request something simple yet healthy.

Zebra zoo theme bento

Who doesn't love a family trip to the zoo?  I am longing for spring with beautiful weather for outings to the zoo.  So todays bento has a zoo theme.  Filled with yummy teriyaki flavored chicken nuggets, a cute as can be Zebra onigiri, okra, broccoli, lion and giraffe quail eggs grapes and strawberries.  The zoo animal picks are intended to be cupcake picks but I tend to look at everything and try to picture bento possibilities. Yes I am a bento junkie!

Piggies!

I believe this is my favorite bento set! Pig bento items are always so cute!  Todays bento is pig-a-riffic!  I made salmon patties, cole slaw, carrot, roasted red potatoes and of course fresh fruit.
Salmon Patties
Ingredients:

•1 can (16 ounces) salmon
•1 small onion, finely grated
•2 tablespoons minced fresh parsley
•ground black pepper, to taste
•2 large eggs, well beaten
•1 to 1 1/2 cups fine dry bread crumbs
•3 tablespoons butter

Preparation:
Turn salmon and liquid into a medium mixing bowl. Flake with a fork, removing OR mashing any bones (they are edible). Mix in grated onion, parsley and pepper. Mix beaten eggs with salmon. Add enough bread crumbs, about 1/2 to 3/4 cup, to make thick enough to shape into 12 small patties. Roll patties in 1/2 cup bread crumbs. In a large heavy skillet over low heat, melt 2 tablespoons of butter; add patties. Fry patties slowly on one side; add remaining butter, turn patties and fry until brown on the other side. (I used panko to coat the patties this time and also added a teaspoon of dill)

Rodeo bento

As you can probably conclude from my posts I take themes from our life for inspiration in bento.  Last night we took the kids to see the Ft. Worth stock show and rodeo.  The kids had such a wonderful time watching the bullriding and seeing all the animals I carried the theme over into lunch to bring a smile to their day.  The onigiri is cumin flavored with food coloring to give the nice brown color with a southwest pork filling.

How many soccer balls can you see?  While that was not the intent you could make a counting game out of this bento.  The sandwich is made with whole grain round bread with veggie burger inside.
